Recipe of the Week

Has Spring finally sprung?  It’s still only early March so there’s plenty of time for the weather to slip back into its wet and wintery ways, but those odd few sunny days in the past week set me thinking about lighter seasonal dishes.  Now, some of the recipes that I’ve already shared here will come into their own in the next few weeks as fruit, salad and vegetables come into season in your location, but others can be made now.  And here’s a new one that has a sense of warmer times but can be made year-round:  it’s my take on Stuffed Peppers – simple and inexpensive to make and very tasty.  The recipe uses one pepper which would be enough for a single vegetarian main or a side for two.
