Recipe of the Week

After a mild autumn with very little frost in our corner of the UK so far, it seems like winter may finally have arrived as December dawns.  As I blogged this week, I am emphatically NOT a fan of cold weather!  Regardless of how many layers I manage to wrap myself up in, I just know that I’ll resist venturing outside any more than is absolutely necessary.  With that in mind, what better way is there, than to spend time at the stove, cooking up another family favourite that can’t fail to warm the cockles of everyone’s heart?  Variations of Chicken and Leek Pie have been on the menu here for longer than I can remember, and this one is hearty, full of flavour and uses cooked chicken left from yesterday’s roast.  That’s also why it’s a perfect Recipe of the Week for December, when at the end of the month there might just be some left-over turkey hanging around that would make a great substitute for the chicken!  I hope you like it!
