I hope that by now you will have had a go at the Chicken & Leek Pie – perhaps even using up some leftover Christmas turkey as a worthy substitute for the chicken. Leeks are a great winter vegetable that can add flavour to many hearty dishes so here’s another one you might like to try. Leek & Potato Soup is one of the most economical of all, needing just 2 leeks, 2 potatoes and an onion plus 2 pints of stock that will feed up to 6, depending on the size of the vegetables.
