
Just a few more days until the Easter Holiday but I’ve been busy preparing for several weeks now, starting with sourcing a Colomba as soon as they appeared in the shops! The Colomba is a traditional Italian Easter cake shaped like a dove, not dissimilar to their Christmas Panettone, but topped off with a sugary almond crust. Last weekend my very special local butcher produced two lovely lamb neck fillets for me to freeze for our Easter Day dinner – and the freezer is also well-stocked with shop-bought hot cross buns for a recipe I’m working on 😉 Then yesterday we had a lot of fun helping 50 very young children make their own Easter Nests, in an event organised by our church. The “hunter-gatherer” still has to get the fish for our Fish Parcels on Good Friday but otherwise I think we’re nearly ready! Phew!
